Low-Fat Vegan Cupcakes with Vegan Chocolate Buttercream Frosting

Guess who finally made something!

I did make truffles for a friend for Valentine's but I never remebered to take pictures of them before I mailed them off. Tonight however, I made low-fat vanilla vegan cupcakes with full-fat chocolate vegan buttercream frosting. I haven't tried the cupcakes yet but the frosting is delicious! Seriously, once I frosted them, I kept nibbling from the bag, finally I just filled a mini cupcake holder and tossed the rest.

Don't know the recipes off the top of my head and I should hit the hay soon so... someone remind me to post them! Hopefully I'll remember... but, I'm pretty sure we all know how absent minded I can be. Until then, enjoy some pictures:

That was my frosting snack, the cupcake tin is what I used for the truffles.

Frosted cupcakes! Look at all the random designs... some I tried to make look like flowers. Heh. In the background are some individual cupcake holders, 'Cup-A-Cake'. The name's cute, I haven't tried them out yet, they were a gift from my mother.

I think I want some of those Cup-a-Cakes. What a good idea!

And I have to say, those are some perfect looking domes on those cupcakes. I always tend to overfill mine. :P

You can find them on Amazon. My mom found them in DC at a Kitchen store. =) Thanks for the compliment, it's easy to do with some nice tips and a piping bag.

The only problem with buttercream frosting on these cupcakes is at room temperature the frosting slides a little. ^.^
